The Origin of Zangi
Do you know Zangi or have you ever eaten Zangi? This is fried chicken in Hokkaido.
Torimatsu which is the Yakitori restaurant in Kushiro is said to be the origin of Zangi. In the 1960s, this shop sold fried chicken which cut the whole broiler into pieces because the owner wondered if we could eat this broiler as anything other than Yakitori. This is the beginning of Zangi. It is standard to eat Zangi with dipping a special sauce in Torimatsu. Also, chunks of chicken on the bone are often used in original Zangi. Incidentally, the name origin of Zangi is “炸鶏” in Chinese.

The Difference between Zangi and Karaage
There is no clear difference. However, Zangi tastes stronger than Karaage according to one theory. And, Zangi are fried with potato starch or flour after seasoning well while Karaage are not seasoned. So, the difference between Zangi and Karaage is whether or not they are seasoned well.
How to make it
You will need some chicken thighs, cooking sake, soy sauce, ginger, garlic, egg, potato starch, and flour for making a Zangi at home.
1. Cut the chicken thigh into a reasonable size.
2. Mix chicken thigh, cooking sake, soy sauce, ginger, and garlic. And put it in the fridge for
thirty minutes.
3. Mix beaten egg, potato starch, and flour.
4. Wipe the excess oil off the chicken thigh with kitchen paper.
5. Mix 1 and 2. 6. Fry the chicken thigh for five minutes.

Naruto
Naruto is one of the famous shops for delicious Zangi. It has many shops in Otaru and mobile shops in Hokkaido so we can eat Naruto’s Zangi if we live in Hokkaido. I found it in a nearby supermarket when I was nine years old. Because Naruto’s Zangi is a little expensive, I eat it after finishing my hard work, for example cleaning my home or taking an exam.
